Handai is an essential tool for making “sushi rice” by mixing cooked rice and vinegar. It absorbs excess moisture while mixing and prevents the sushi rice from being soggy. Using a separately sold lid would prevent the rice from getting dry. It also enables to use the Handai as an Ohitsu.
We handle Handai made of the highest quality Sawara tree (type of cypress) over 100 years old from Kiso, Nagano. Sawara wood has been traditionally used for kitchen and bath tools for its high durableness.
TAKUMI Handai is made by a special technique, which allows hiding the band by inserting inside the wood. Thus, there is no need of worrying the band coming off or discoloring.
