[Features]
Edosaki is a type of knife for filleting eels by Kanto style (Eastern Japan), in which the eel is split down the back. The sharp slanted blade can easily cut from the backbone.
Shirogami No.2 carbon steel has a good balance of retention of the edge and easiness to sharpen.

[Precaution]
- NOT dishwasher safe
- To prevent rust, thoroughly wipe the knife after washing.
- Apply a thin layer of oil on the blade before storing to protect it from humidity and make it more rust resistant.
