[Features]
Usuba is a single bevel vegetable knife. The sharp blade can slice vegetables in paper thin sheets and can also make decorative garnish. Since the blade has only single bevel, you need to be careful not to cut through the ingredients narrow when cutting straight down. "Kamagata" is a type of Usuba which is mainly used in Kansai region (Western Japan) and the sharp tip of blade is perfect for delicate works.
Shirogami No.2 carbon steel has a good balance of retention of the edge and easiness to sharpen.

[Precaution]
- NOT dishwasher safe
- To prevent rust, thoroughly wipe the knife after washing.
- Apply a thin layer of oil on the blade before storing to protect it from humidity and make it more rust resistant.
