A knife for slicing sashimi from fish fillet. The long single bevel blade enables to slice fish fillet in one stroke without damaging the surface and creates a smooth texture. You slice by pulling the knife toward you as you cut. It can slice not only fish but also raw or cooked meat as well.
Aogami carbon steel is a type of alloy steel created by adding Chrome and Tungsten to Shirogami carbon steel. It has high wear resistance and can maintain sharpness for longer time. Aogami No.2 isn't as hard as Aogami No.1 and is easier to sharpen. Since it requires some skill to handle this blade, we recommend it for customers who are used to Japanese carbon steel knives.

- To prevent rust, thoroughly wipe the knife after washing.
- Apply a thin layer of oil on the blade before storing to protect it from humidity and make it more rust resistant.
